A Melbourne cafe tried serving broccoli lattes

A Melbourne cafe tried serving broccoli lattes”

Okay maybe not quite, but you get the gist - the most unexpected concoctions can become popular.

So, along with beetroot, turmeric, and mushroom lattes, it appears broccoli is next in line.

Bunches of broccoli deemed too imperfect looking to be stocked on shop shelves have been mashed up, dried and turned into a powder by the CSIRO and agriculture research group Hort Innovation.

“With a rising trend in healthy eating across the board, Australian growers are always looking at ways to diversify their products and cut waste while meeting consumer demand, ” he said. Since people love their coffee more than their veggies, researchers from CSIRO, Australia's chief research organization, have created an ingenious solution to help you eat and drink healthier: a broccoli powder.

But unlike sneaking the odd carrot into your smoothie, two tablespoons of this broccoli powder is supposed to be the equivalent of five servings of vegetables.

Mr Lloyd also said despite the increasing popularity of ‘superfoods and health and wellness, Australian diets are still poor.

Made from whole broccoli, the processing of the powder retains the natural colour, flavour and nutrient composition of fresh broccoli. But now it may be a bit easier to hide broccoli in other foods, as Australian scientists have developed a nutritious broccoli powder that can be sprinkled through meals or, if you're feeling particularly adventurous, used to make a broccoli latte. "Prototype extruded snacks with 20 to 100 per cent vegetable content were displayed during National Science Week at the Queen Victoria Market a year ago and were well-received by parents and even by kids". As part of a research project that aims to reduce vegetable waste, they made a decision to grind unused broccoli at grocery stores into powder.

The next steps are to further develop the product and test it with consumers with the hope of making it commercially available in the future.

“The CSIRO team and Hort Innovation are discussing possible commercial applications with potential growers and others in the value chain who are interested in getting the powder on the market, ” she said.
