That means the much-desired Cheesy Fiesta Potatoes and other favorites like the Spicy Potato Soft Taco will return to the menu after a brief hiatus.

The company's stock was up $17.13, or 13.67%, to $142.48 and climbing in midday trading after Taco Bell announced that it would embrace Beyond Meat to come up with new menu items due to be tested in the next year.

The Cheesy Fiesta Potatoes and the Spicy Potato Soft Taco will be back starting March 11.

Taco Bell devotees will see the potato's return and know now more than ever that the brand is listening to its meat-free customers. Taco Bell is said to have more than 30 vegetarian ingredients on its US menu in total, and the expansion of its vegetarian menu will ensure that the chain continues to be a favorite fast-food destination for those who don't eat meat.

Taco Bell Chief Executive Officer Mark King had said in early 2020 that the restaurant was ready to embrace meat alternatives, a contrast to its previous stance that the vegetarian options on its menu using beans and cheese were sufficient. More potato menu options are in the works as well. Taco Bell soon confirmed the news, leading to a stream of dismay online.

The decision to remove the potatoes in particular upset vegetarians. You can also easily swap meat for potatoes or beans on any of Taco Bell's menu items if you're looking for more veggie-friendly options.

Taco Bell has generally avoided plant-based items, even as sister chains Pizza Hut and KFC publicly tested plant-based meat while chains such as Del Taco have eagerly jumped into the market.

The hit menu item got axed earlier in the pandemic, but the beloved fast food chain announced on Thursday that they were coming back in March. The chain has apparently made its choice.
